Vegan Ramen in Tokyo

I loved the ramen at Afuri. There are several locations throughout Tokyo. I went to the Harajuku location at lunchtime on a weekday. There were around 15 people ahead of me and I waited around 25 mins, but it was well worth it.

Afuri ramen is different from ramen you've had elsewhere. It's lighter, tasty and less greasy. Their signature ramen is made with yuzu, which is a small yellow citrus fruit native to Asia. It adds a touch of freshness to the ramen and pairs perfectly with the broth. The water used to make the broth is sourced from Mt. Afuri, which is on the edge of the Tanzawa mountains. Legend has it Mt. Afuri is the father of Mt. Fuji (I love a good legend).

When you get inside, there is a vending machine where you place your order, then someone comes up to you while you are still on line and takes your receipt and starts preparing your ramen. By the time you get a seat it takes only a few minutes for your food to come out. Not a bad system in my opinion.
